Summer Salads with Stonyfield and Taylor Farms: Creamy Roasted Garlic Salad Dressing

I love salads. In my family, I'm known for making hearty, healthy salads. One of my favorite restaurants in the world is Insalata Ricca, a salad-centered bistro in Rome. Most days, I eat a big, bountiful salad for lunch. And I'm always keeping my eyes open for new recipes for salad combos and dressings.

I was inspired by my friends at Stonyfield Organic to pair their Whole Milk Greek yogurt to create a easy, creamy roasted garlic salad dressing. This super easy dressing is a nutrition packed go-to for the summer months! You'll want to serve this creamy yet light salad dressing atop one of Taylor Farms Chef Crafted Salads: I highly recommend Kale and Beet!

Creamy Roasted Garlic Salad Dressing

  • 1 bulb of garlic
  • juice from one lemon
  • 1 tablespoon apple cider vinegar 
  • 1/2 cup plain Stonyfield Organic whole milk Greek yogurt
  • 1/2 cup extra virgin olive oil, best quality such as Lucini
  • tsp salt
  • tsp freshly ground black pepper
  • TBS chopped chives 
Step 1: Roast the garlic: Chop off the top of the garlic bulb, and place on a baking tray in a preheated 350 degree oven. Bake for 25 minutes.

Step 2. Prep the salad dressing: Squeeze the caramelized cloves of garlic out of the bulb and add to a food processor with the remaining ingredients. Process until smooth. 

Refrigerate until ready to serve. The dressing keeps well for 3-4 days.
