Breakfast is such an important part of the day. But in our family, it's usually rushed and hectic. I need to always keep a variety of tried and true breakfast items on hand, so I can quickly and easily prep a breakfast before we all head out the door and begin our busy days.

That said, when I have time, I always like to make breakfast a little more delightful and fun.

For the past two days, we have been stuck indoors, as Chicago experiences a polar vortex. School has been cancelled and so we are nestled indoors staying warm and cozy. I wanted to prep a sweet little breakfast to bring a spring smile to our faces as we wait for this polar vortex to pass. And so I took pancakes, split one in half to form ears, and created a bunny shaped head. I spread the bunny with Nutella and used Cheerios to make eyes, nose and mouth. And then to round it out, I added fruit - bananas - that I sliced and spread with my kids favorite peanut butter, creamy Jif. The kids gobbled up their bunnies and for a moment, we dreamed of bunnies, and green grass, and...spring!
